Jiangsu Province 江 苏 省 简 介 - Liyang Tianmu Lake Tourism and Holiday Resort 溧阳天目湖旅游渡假区In Qin Dynasty (221-206BC), a county was set up here. Liyang (population 780,000), an ancient city in the beautiful south of the Yangtze River of China, is located at the juncture where Jiangsu, Zhejiang and Anhui provinces converge. In 1985, Liyang was listed in the Yangtze River Delta and Shanghai Economic Zone. It is one of the 100 Counties with Powerful Comprehensive Strength of the country. Eight kilometers away from the south of the urban area, lies a green wonderland. That is the famous Jiangsu Tianmu Lake Scenic Spot. It takes the two large reservoirs—Shahe and Daxi as the center, which are called “the bright pearls in the south of Yangtze River.” The range includes about 300 square kilometers around. The scenic spot is about 80 to 200 kilometers away from Nanjing, Zhenjiang, Yangzhou, Changzhou, Wuxi, Suzhou, Shanghai, Hangzhou and Huangshan, and is located in the central part. It is an ideal summer resort for sightseeing, and conference. The “beauty,” “open country delight” and “three wonders ” are the salient features of the Tianmu Lake Scenic Spot. Tianmu Lake Stewed Fish-Head Soup in Earthenware Pot 天目湖沙锅鱼头 The Tianmu Lake Fish-Head Soup in Earthenware Pot originated from Tianmuhe Hotel of Liyang City, Jiangsu Province. For about 40 years’ special preparation made by Zhu Shuncai朱顺才, a nationally renowned special-class chef, the fish-head soup has been widely recognized as one of the best traditional dishes within the province and consequently become one of the unique cooking styles in the food services nationwide. To cook the fish-head soup, the variegated carp or bighead (aristichthys nobilis) 胖头鱼(也称鳙鱼或花鲢) naturally bred in Tianmu Lake must be selected as raw materials with the pure water from the lake as its base. This is largely because the plantations on the hills around the lake assist in filtering out the water. The bottom of the lake made up of sand other than mud, more importantly, creates a special environment of clear water without contamination, thus bringing no muddy smell to the fish. Prepared by Zhu Shuncai with his special cuisine techniques, the fish-head soup has been widely appreciated by many customers from all parts of the world for its qualities of being fresh but not fishy, fat but not oily. Many Chinese Party and government leaders such as Mr Deng Xiaoping, Jiang Zemin, Yang Shangkun, Wan Li and Wang Zhen greatly enjoyed the soup. The reputation 75 countries in October 1982 to come to Tianmu Lake and savoured the soup in persons. The fish-head soup in Tianmuhu Hotel in Liyang is the real McCoy.
